Ages 18&Up: The proper use of the chef's knife in the kitchen will do as much to improve your cooking ability as anything else you can do. This is a hands-on class that emphasizes proper technique, safety, selection of proper knives and care and upkeep. We'll discuss how knives are made and even what kind of cutting board to buy. You can use our knives, bring your own to use (we'll evaluate them for you) or purchase new ones from the complete line of professional knives that we have available (and you even get a discount!). You will peel, slice and chop vegetables and fruits as well as separate and de-bone a chicken. You will use a peeler, chef's knife, paring knife and boning knife during the course of the class. Lunch will be prepared from the fruits of your labors, so bring an appetite. $15 food fee due instructor at class time.

General Cooking

Ages 15&Up: Herb Roasted Half Chicken, Italian style, served with a Tuscan style bread salad made from the reserved drippings of the perfectly roast chicken. The Queen of Italian desserts may well be Strawberries Balsamico, fresh strawberries with real balsamic vinegar. Not the stuff you buy in the store but real, true balsamic vinegar carried back from Modena in my suitcase, served with Strawberry Sorbet. Take home recipes provided. Remember, we eat what we fix in these classes so make sure you bring an appetite as well. $15 food fee due instructor at class.

Ages 15&Up: First you will learn the secrets of the 'skins' from what kinds to buy to where to buy them. Then you will move on to making the stuffings, including shrimp, crab, pork and veggies. We will prepare dipping sauces for the meal. Then you will learn how to pleat, fold, seal the dumplings so they don't come apart while they are cooking. This extra special class will be a full four hours and you don't want to miss a minute of it. Take home recipes will be provided. $20 food fee due instructor at class time. Ages 15&Up: The best of summer, perfectly prepared. First is a brand new recipe, a wonderful Butter Lettuce Salad with Hazelnuts followed by Turkey Cutlets (and or Pork Cutlets) with a very special Chipotle Onion Gravy (my recipe printed in Cooking Light Magazine) and Chipotle and Tamerind Braised Greens (Collard, Chard, Kale or whatever is freshest at the market). We'll top this great meal off with Strawberry Filled Corn Cakes with Fresh Strawberries and whipped cream . Take home recipes. Remember, we eat what we fix in these classes so make sure you bring an appetite as well. $15 food fee due instructor at class time.

Ages 15&Up: 'We'll make our own tamale dough from masa, soak the corn husks, lay out the masa dough and make up a whole selection of fillers for our tamale's. We'll have chicken and pork and of course chili rojo salsa. And we won't quit there. We'll also do dessert tamale's and maybe even some real Mexican combinations that you might not have thought of, like Mushroom and Kale. But best of all, instead of steaming for up to two hours as is the normal practice I'll introduce you to a new and proven method of steaming your tamales in much less time but with the exact same results! Ages 15 & up We'll have plenty of ground beef on hand for this class. So, we can make a wonderful grilled hamburger unlike any you have had before. We will serve it with our own homemade Red Onion and Wine Jam. Then we'll smoke boneless skinless chicken breasts to make a wonderful smoked chicken salad along with a Grilled Honey Vegetable Platter. Then we will top that off with a grilled pineapple dessert that proves you can do most anything on a grill. We use both the big gas grill and the big, round kettle charcoal grill, so you're covered no matter what you have at home. Take home recipes. Wine and Dine - Adults

Age 21 & up; You will get a full introduction to the famous family of wine grapes, the Pinot's. Pinot Noir (the black pinot) the world famous great red wine of Burgundy, Pinot Gris (Pinot Grigio) the Grey Pinot, Pinot Blanc, the White Pinot and even Pinot Muniere, one you probably have never heard of before. Recipes will include Agrodolce Meatballs, a Spanish recipe; oil poached Tuna with Fennel and Orange, a French recipe; and Roast Chicken, and American recipe. In this class we have a full participation cooking class for the first half of the class and then we taste nine different wines with the foods we have prepared. We eat what we fix so make sure you bring an appetite as well. Take home recipes. $20 food and wine fee due instructor at class time.

Ages 21&Up: Great summer recipes will include a fresh tuna Nicoise Salad, pan seared Maryland style Crab Cakes with home made potato salad and grilled Sea Bass with Mango Salsa. Each dish will be accompanied by three different white wines, chosen specifically for the summer wine drinking season and weather. We'll include reasonably priced wines and maybe even a box or jug. Ages 21&Up: It is time to revisit the most prolific wine production area of the United States, if not the world. We will also feature original California recipes for the cooking portion of our class. Wines will include selections from the world famous Sonoma and Napa Valleys, south through the largest wine production area in the state, the Central Valley all the way south so San Diego. We will have at least one 'California Cab' as well as a 'California Chard,' the two wines that established California as a world class producer of wines.
